Dijon Salmon

Dijon Salmon 

 

 

1 1/2 pounds of salmon 

1/4 cup fresh parsley 

1/4 cup whole grain Dijon mustard 

2 tbsp extra virgin olive oil 

3 cloves garlic finely chopped 

1 tsp fresh lemon zest 

1 tbsp fresh lemon juice 

1 tbsp of honey 

 

 

Preheat oven to 375 degrees 

 

Allow salmon to sit out for 10-15 mins to come to room temperature. 

 

Combine in a bowl: parsley, mustard, olive oil, garlic, honey, lemon zest and juice. 

 

Line your baking dish with aluminum foil and place salmon skin side down on foil.   

 

Generously cover salmon with Dijon mixture. 

 

Cook for about 18-20 mins depending on size and thickness of salmon.  

 

Serve with sides of your choice or even over a bed of salad greens and enjoy!
